Quick Southwestern Chili

Great recipe for those cold nights!

Ingredients:

  • 1 lb. lean ground beef combined with 1 lb. ground turkey breast
  • 1 onion, chopped
  • 1 cloves fresh garlic, chopped
  • 3 – 14 1/2 ounce cans low-sodium diced tomatoes
  • 1 – 4 or 5 ounce can mild green chilies
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cans black beans, drained and rinsed
  • 1 cup water
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt

In a medium or large stock pot, brown the ground turkey and ground beef with onions and garlic over medium-high heat.  Add remaining ingredients and stir.  Bring mixture to just before boiling, cover and reduce heat to medium-low for 20 minutes.  Serve with shredded cheddar cheese, Greek style yogurt, and/or fresh cilantro if desired.  (Serves 8)
